Ingredients
| 500 grams | goat intestines (boti) |
| 2 tablespoons | oil |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | mustard seeds |
| 1 cup | onions, finely chopped |
| 1 tablespoon | ginger-garlic paste |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | garam masala |
| 2 cups | water |
| 2 tablespoons | fresh coriander leaves, chopped |

Instructions
- 1 Clean the goat intestines thoroughly under running water and cut them into small pieces.
- 2 Heat oil in a pressure cooker over medium heat and add cumin seeds and mustard seeds.
- 3 Once they splutter, add the chopped onions and sauté until they turn golden brown.
- 4 Add the ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
- 5 Add the cleaned boti pieces and sauté for 5 minutes.
- 6 Stir in red chili powder, turmeric powder, coriander powder, and salt. Mix well.
- 7 Add water and close the pressure cooker lid. Cook for 20 minutes or until the boti is tender.
- 8 Once the pressure releases, open the lid and add garam masala. Mix well and simmer for another 5 minutes.
- 9 Garnish with fresh coriander leaves and serve hot.
Tips
Ensure the boti is cleaned thoroughly to remove any odor. You can also add a splash of lemon juice for extra flavor.
