Ingredients
| 1 medium | cauliflower (gobhi) |
| 2 tablespoons | mustard oil |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1/2 teaspoon | red chili powder |
| 1 teaspoon | garam masala |
| 1 teaspoon | amchur (dried mango powder) |
| 1 medium | onion, finely chopped |
| 1 inch | ginger, grated |
| 2 cloves | garlic, minced |
| 1 medium | tomato, chopped |
| — | salt to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Cut the cauliflower into small florets and wash thoroughly.
- 2 Heat mustard oil in a pan until it starts to smoke, then reduce the heat.
- 3 Add cumin seeds and let them splutter.
- 4 Add chopped onions and sauté until they turn golden brown.
- 5 Add ginger and garlic, and sauté for another minute.
- 6 Add chopped tomatoes and cook until they become soft.
- 7 Stir in turmeric powder, coriander powder, red chili powder, and salt. Mix well.
- 8 Add cauliflower florets and mix until they are well coated with the spices.
- 9 Cover the pan and let it cook on low heat for about 15-20 minutes, stirring occasionally.
- 10 Once the cauliflower is tender, add garam masala and amchur powder. Mix well.
- 11 Garnish with fresh coriander leaves and serve hot.
Tips
For a richer flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.
