Ingredients

4 slices Italian bread
2 cloves garlic
4 tablespoons extra virgin olive oil
4 ripe tomatoes
10 leaves fresh basil
salt to taste
freshly ground black pepper to taste

Instructions

  1. 1 Preheat your oven to 400°F (200°C).
  2. 2 Dice the tomatoes and place them in a bowl.
  3. 3 Chop the basil leaves and add them to the tomatoes.
  4. 4 Add 2 tablespoons of olive oil, salt, and pepper to the tomato mixture and stir to combine.
  5. 5 Slice the Italian bread and place the slices on a baking sheet.
  6. 6 Toast the bread slices in the oven for about 5-7 minutes, until they are golden and crisp.
  7. 7 Peel the garlic cloves and rub them over the warm toasted bread.
  8. 8 Drizzle the remaining olive oil over the toasted bread slices.
  9. 9 Top each slice with a generous spoonful of the tomato and basil mixture.
  10. 10 Serve immediately while the bread is still warm.

Tips

For a more robust flavor, let the tomato mixture sit for 10 minutes to allow the flavors to meld before topping the bread.
