Ingredients

Crouton 1/2 cup Crouton

Instructions

  1. 1 Wash the romaine lettuce thoroughly and pat dry with paper towels. Tear into bite-sized pieces and set aside.
  2. 2 In a small saucepan, bring water to a boil. Gently lower the egg into the boiling water and cook for 1 minute. Remove the egg and set aside to cool slightly.
  3. 3 In a small bowl, whisk together the lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and a pinch of salt.
  4. 4 Crack the soft-boiled egg into the lemon juice mixture and whisk until smooth.
  5. 5 Slowly drizzle in the olive oil while continuing to whisk until the dressing is well combined and emulsified.
  6. 6 In a large salad bowl, combine the romaine lettuce, croutons, and Parmesan cheese.

Tips
