Ingredients
| 1 cup | chakhao (black rice) |
| 2 cups | water |
| 1/4 cup | sugar |
| 1/4 teaspoon | salt |
| 1/2 cup | coconut milk |
| 2 tablespoons | grated coconut |
| — | banana leaves or foil (optional, for serving) |
Instructions
- 1 Rinse the chakhao (black rice) thoroughly under cold water.
- 2 Soak the rice in water for at least 4 hours or overnight for best results.
- 3 Drain the soaked rice and transfer it to a pot.
- 4 Add 2 cups of water to the pot with the rice.
- 5 Bring the water to a boil over medium heat.
- 6 Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is tender and the water is absorbed.
- 7 Add sugar, salt, and coconut milk to the cooked rice.
- 8 Gently stir the mixture and cook for another 5 minutes on low heat, allowing the flavors to meld.
- 9 Remove from heat and let it cool slightly.
- 10 Serve warm, garnished with grated coconut. Optionally, serve on banana leaves or foil for an authentic touch.
Tips
Soaking the rice overnight enhances its texture and flavor. Adjust the sweetness to your preference by varying the sugar amount.
