Ingredients

1/4 cup Chakhao Amubi (black rice)
1 liter whole milk
1/4 cup sugar
1/4 teaspoon cardamom powder
1 tablespoon chopped nuts (almonds, pistachios)
1 tablespoon raisins
saffron strands (a pinch, optional)

Instructions

  1. 1 Wash the Chakhao Amubi (black rice) thoroughly under running water.
  2. 2 Soak the rice in water for 30 minutes.
  3. 3 Drain the water from the soaked rice.
  4. 4 In a heavy-bottomed pan, bring the milk to a boil.
  5. 5 Add the soaked and drained black rice to the boiling milk.
  6. 6 Reduce the heat to low and let it simmer, stirring occasionally, until the rice is cooked and the mixture thickens, about 25-30 minutes.
  7. 7 Add sugar and cardamom powder, and mix well.
  8. 8 Continue to cook for another 5 minutes, ensuring the sugar is completely dissolved.
  9. 9 Turn off the heat and let it cool slightly.
  10. 10 Garnish with chopped nuts, raisins, and saffron strands before serving.

Tips

For a richer flavor, you can add a few drops of rose water or kewra essence before serving.
