Ingredients
| 1/4 cup | Chakhao Amubi (black rice) |
| 1 liter | whole milk |
| 1/4 cup | sugar |
| 1/4 teaspoon | cardamom powder |
| 1 tablespoon | chopped nuts (almonds, pistachios) |
| 1 tablespoon | raisins |
| — | saffron strands (a pinch, optional) |
Instructions
- 1 Wash the Chakhao Amubi (black rice) thoroughly under running water.
- 2 Soak the rice in water for 30 minutes.
- 3 Drain the water from the soaked rice.
- 4 In a heavy-bottomed pan, bring the milk to a boil.
- 5 Add the soaked and drained black rice to the boiling milk.
- 6 Reduce the heat to low and let it simmer, stirring occasionally, until the rice is cooked and the mixture thickens, about 25-30 minutes.
- 7 Add sugar and cardamom powder, and mix well.
- 8 Continue to cook for another 5 minutes, ensuring the sugar is completely dissolved.
- 9 Turn off the heat and let it cool slightly.
- 10 Garnish with chopped nuts, raisins, and saffron strands before serving.
Tips
For a richer flavor, you can add a few drops of rose water or kewra essence before serving.
