Wheat gluten (chakki) — kneaded dough washed until only the elastic gluten remains — cooked as a sabzi in a spiced onion-tomato gravy with mustard seeds and dried chilli, giving it a dense, chewy, almost meaty texture. A uniquely Malwi preparation found nowhere else in India.
