Crispy, deep-fried spiral snacks made from a dough of rice flour, urad dal flour, and sesame seeds, spiced with ajwain, chilli, and asafoetida, piped through a star-shaped mould into tight coils and fried until snapping-crisp. The definitive Diwali snack of Maharashtra, Karnataka, and Gujarat — made in enormous batches and packed into tins alongside karanji and chivda. Each region has its own slightly different dough base.

Ingredients

1 cup rice flour
1/2 cup chickpea flour (besan)
1/4 cup urad dal flour
1 tablespoon white sesame seeds
1 teaspoon cumin seeds
1 teaspoon red chili powder
1/4 teaspoon asafoetida
1 tablespoon butter
salt to taste
oil for deep frying
water as needed

Instructions

  1. 1 In a large mixing bowl, combine rice flour, chickpea flour, and urad dal flour.
  2. 2 Add sesame seeds, cumin seeds, red chili powder, asafoetida, and salt to the flour mixture.
  3. 3 Melt the butter and add it to the dry ingredients. Mix well.
  4. 4 Gradually add water to the mixture, kneading it into a smooth, firm dough.
  5. 5 Fill a chakli maker with the dough and press out spirals onto small squares of parchment paper.
  6. 6 Heat oil in a deep frying pan over medium heat.
  7. 7 Carefully slide the chakli spirals into the hot oil and fry until golden brown and crispy.
  8. 8 Remove the chakli from the oil and drain on paper towels.
  9. 9 Allow them to cool completely before serving or storing.

Tips

Ensure the dough is firm yet pliable to prevent the chakli from breaking while frying.
