Ingredients
| 1 cup | basmati rice |
| 1 tablespoon | ghee |
| 1 teaspoon | cumin seeds |
| 1 cup | mixed vegetables (carrot, peas, beans) |
| 1 teaspoon | salt |
| 2 cups | water |
| 1 small | onion, finely chopped |
| 1 teaspoon | ginger-garlic paste |
| 1 pinch | turmeric powder |
| 1 pinch | black pepper |
| 2 tablespoons | fresh coriander, chopped |
Instructions
- 1 Wash and soak the basmati rice for 20 minutes, then drain.
- 2 Heat ghee in a pot over medium heat.
- 3 Add cumin seeds and let them splutter.
- 4 Add the chopped onion and sauté until golden brown.
- 5 Stir in the ginger-garlic paste and cook for another minute.
- 6 Add the mixed vegetables and sauté for 3-4 minutes.
- 7 Add turmeric powder, salt, and black pepper, and mix well.
- 8 Add the soaked rice and gently stir to combine with the vegetables.
- 9 Pour in the water and bring to a boil.
- 10 Reduce heat to low, cover the pot, and let it simmer until the rice is cooked and water is absorbed, about 15-20 minutes.
- 11 Turn off the heat and let it sit covered for 5 minutes.
- 12 Fluff the rice with a fork and garnish with fresh coriander before serving.
Tips
For extra flavour, use whole spices like cloves and bay leaf in the ghee before adding onions.
