Ingredients

1 cup mustard greens
1 cup spinach
1 cup fenugreek leaves
1 cup water
1 tablespoon baking soda
2 cloves garlic
1 inch ginger
2 pieces green chilies
1 teaspoon salt
salt to taste

Instructions

  1. 1 Wash the mustard greens, spinach, and fenugreek leaves thoroughly to remove any dirt.
  2. 2 Boil 1 cup of water in a pot and add the baking soda.
  3. 3 Add the mustard greens, spinach, and fenugreek leaves to the boiling water.
  4. 4 Cook the greens until they are soft and tender, about 10-15 minutes.
  5. 5 Drain the greens and let them cool slightly.
  6. 6 In a mortar and pestle, crush the garlic, ginger, and green chilies into a coarse paste.
  7. 7 Mix the paste with the cooked greens and add salt to taste.
  8. 8 Mash everything together until well combined and slightly smooth.
  9. 9 Serve the Chakluk Ametpa as a side dish or with steamed rice.
