Ingredients
| 1 cup | chana dal |
| 3 cups | water |
| 1 medium | onion, finely chopped |
| 1 medium | tomato, finely chopped |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 teaspoon | turmeric powder |
| 1 tablespoon | red chili powder |
| 1 tablespoon | god masala or garam masala |
| 1 tablespoon | jaggery |
| 1 tablespoon | tamarind pulp |
| Salt | to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Wash the chana dal thoroughly and soak it in water for 30 minutes.
- 2 Drain the water and add the soaked chana dal to a pressure cooker with 3 cups of water.
- 3 Pressure cook the dal for 3-4 whistles or until it becomes soft but not mushy.
- 4 In a pan, heat oil over medium heat and add mustard seeds. Allow them to splutter.
- 5 Add cumin seeds and asafoetida, and sauté for a few seconds.
- 6 Add the chopped onion and sauté until they turn golden brown.
- 7 Add the chopped tomato and cook until it becomes soft and pulpy.
- 8 Stir in turmeric powder, red chili powder, and god masala. Mix well.
- 9 Add the cooked chana dal to the pan along with jaggery, tamarind pulp, and salt to taste.
- 10 Mix everything well and let it simmer for 5-10 minutes to blend the flavors.
- 11 Garnish with chopped coriander leaves before serving.
Tips
Adjust the consistency of the amti by adding more water if needed. Serve hot with steamed rice or roti.
