Ingredients

chana dal 1 cup Chana dal
water 3 cups Water
Onion 1 medium Onion , finely chopped
Tomato 1 medium Tomato , finely chopped
oil 2 tablespoons Oil
Mustard Seed 1 teaspoon Mustard Seed
Cumin 1 teaspoon Cumin , seeds
asafoetida 1 pinch Asafoetida
turmeric powder 1 teaspoon Turmeric powder
red chili powder 1 tablespoon Red chili powder
garam masala 1 tablespoon Garam masala
jaggery 1 tablespoon Jaggery
Tamarind 1 tablespoon Tamarind , pulp
to taste Salt To taste
Cilantro 2 tablespoons Cilantro , chopped

Instructions

  1. 1 Wash the chana dal thoroughly and soak it in water for 30 minutes.
  2. 2 Drain the water and add the soaked chana dal to a pressure cooker with 3 cups of water.
  3. 3 Pressure cook the dal for 3-4 whistles or until it becomes soft but not mushy.
  4. 4 In a pan, heat oil over medium heat and add mustard seeds. Allow them to splutter.
  5. 5 Add cumin seeds and asafoetida, and sauté for a few seconds.
  6. 6 Add the chopped onion and sauté until they turn golden brown.
  7. 7 Add the chopped tomato and cook until it becomes soft and pulpy.
  8. 8 Stir in turmeric powder, red chili powder, and god masala. Mix well.
  9. 9 Add the cooked chana dal to the pan along with jaggery, tamarind pulp, and salt to taste.
  10. 10 Mix everything well and let it simmer for 5-10 minutes to blend the flavors.
  11. 11 Garnish with chopped coriander leaves before serving.

Tips

Adjust the consistency of the amti by adding more water if needed. Serve hot with steamed rice or roti.
