Ingredients

1 cup | Chana dal |

2 cups | Whole wheat flour |
|
1 teaspoon | Cumin , seeds |
|
1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 teaspoon | Garam masala |
|
1 tablespoon | Ginger-garlic paste |
|
2 tablespoons | Oil , for deep frying |
|
— | Salt , to taste |

Instructions
- 1 Rinse the chana dal thoroughly and soak it in water for 2-3 hours.
- 2 Drain the soaked chana dal and grind it coarsely in a blender without adding water.
- 3 In a pan, heat 2 tablespoons of oil and add cumin seeds. Let them splutter.
- 4 Add ginger-garlic paste and sauté until the raw smell disappears.
- 5 Add the ground chana dal, turmeric powder, red chili powder, garam masala, and salt. Cook for 5-7 minutes on medium heat until the mixture is dry and aromatic. Set aside to cool.
- 6 In a mixing bowl, combine whole wheat flour with a pinch of salt and enough water to form a smooth dough. Cover and let it rest for 15 minutes.
- 7 Divide the dough into equal-sized balls and flatten each ball slightly.
- 8 Place a spoonful of the chana dal mixture in the center of each flattened dough ball and seal the edges to enclose the filling.
- 9 Roll each filled ball gently into a puri, ensuring the filling does not spill out.
- 10 Heat oil in a deep frying pan. Once hot, fry each puri until golden brown on both sides. Drain on paper towels.
- 11 Serve hot with chutney or pickle.
Tips
Ensure the chana dal mixture is dry to prevent the puris from breaking while rolling.
