Ingredients

1 cup chana dal
2 cups whole wheat flour
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1 tablespoon ginger-garlic paste
2 tablespoons oil
salt to taste
water as needed
oil for deep frying

Instructions

  1. 1 Rinse the chana dal thoroughly and soak it in water for 2-3 hours.
  2. 2 Drain the soaked chana dal and grind it coarsely in a blender without adding water.
  3. 3 In a pan, heat 2 tablespoons of oil and add cumin seeds. Let them splutter.
  4. 4 Add ginger-garlic paste and sauté until the raw smell disappears.
  5. 5 Add the ground chana dal, turmeric powder, red chili powder, garam masala, and salt. Cook for 5-7 minutes on medium heat until the mixture is dry and aromatic. Set aside to cool.
  6. 6 In a mixing bowl, combine whole wheat flour with a pinch of salt and enough water to form a smooth dough. Cover and let it rest for 15 minutes.
  7. 7 Divide the dough into equal-sized balls and flatten each ball slightly.
  8. 8 Place a spoonful of the chana dal mixture in the center of each flattened dough ball and seal the edges to enclose the filling.
  9. 9 Roll each filled ball gently into a puri, ensuring the filling does not spill out.
  10. 10 Heat oil in a deep frying pan. Once hot, fry each puri until golden brown on both sides. Drain on paper towels.
  11. 11 Serve hot with chutney or pickle.

Tips

Ensure the chana dal mixture is dry to prevent the puris from breaking while rolling.
