Ingredients

1 cup black chickpeas (chana)
1 tablespoon mustard oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 inch ginger, grated
1 green chili, chopped
1 teaspoon salt
1 tablespoon coriander leaves, chopped

Instructions

  1. 1 Rinse the black chickpeas and soak them in water overnight or for at least 8 hours.
  2. 2 Drain the soaked chickpeas and add them to a pressure cooker with enough water to cover them.
  3. 3 Pressure cook the chickpeas for about 15-20 minutes or until they are soft and cooked through.
  4. 4 In a pan, heat the mustard oil until it begins to smoke slightly, then reduce the heat.
  5. 5 Add the chopped onions and sauté until they turn golden brown.
  6. 6 Add the minced garlic, grated ginger, and chopped green chili to the pan and sauté for another 2-3 minutes.
  7. 7 Add the cooked chickpeas to the pan and mix well with the sautéed ingredients.
  8. 8 Season with salt and cook for another 5 minutes, allowing the flavors to meld together.
  9. 9 Garnish with chopped coriander leaves before serving.

Tips

For a smokier flavor, you can add a pinch of smoked paprika or a small piece of smoked meat while cooking the chickpeas.
