Ingredients
| 1 cup | black chickpeas (chana) |
| 1 tablespoon | mustard oil |
| 1 | medium onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, grated |
| 1 | green chili, chopped |
| 1 teaspoon | salt |
| 1 tablespoon | coriander leaves, chopped |
Instructions
- 1 Rinse the black chickpeas and soak them in water overnight or for at least 8 hours.
- 2 Drain the soaked chickpeas and add them to a pressure cooker with enough water to cover them.
- 3 Pressure cook the chickpeas for about 15-20 minutes or until they are soft and cooked through.
- 4 In a pan, heat the mustard oil until it begins to smoke slightly, then reduce the heat.
- 5 Add the chopped onions and sauté until they turn golden brown.
- 6 Add the minced garlic, grated ginger, and chopped green chili to the pan and sauté for another 2-3 minutes.
- 7 Add the cooked chickpeas to the pan and mix well with the sautéed ingredients.
- 8 Season with salt and cook for another 5 minutes, allowing the flavors to meld together.
- 9 Garnish with chopped coriander leaves before serving.
Tips
For a smokier flavor, you can add a pinch of smoked paprika or a small piece of smoked meat while cooking the chickpeas.
