Ingredients

1 cup barley
4 cups water
1 pinch salt
1 cup starter yeast or leftover Chang

Instructions

  1. 1 Wash the barley thoroughly in cold water and drain.
  2. 2 In a large pot, bring the water to a boil.
  3. 3 Add the washed barley to the boiling water and cook until the barley is tender, about 30 minutes.
  4. 4 Remove the pot from heat and let it cool to room temperature.
  5. 5 Once cooled, add the starter yeast or leftover Chang to the barley mixture.
  6. 6 Cover the pot with a clean cloth and let it ferment at room temperature for 2-3 days.
  7. 7 After fermentation, strain the liquid from the barley using a fine mesh sieve or cheesecloth.
  8. 8 Transfer the liquid to a clean container and refrigerate before serving.

Tips

For a stronger flavor, ferment the Chang for an additional day.
