Ingredients
| 1 cup | barley |
| 4 cups | water |
| 1 pinch | salt |
| 1 cup | starter yeast or leftover Chang |
Instructions
- 1 Wash the barley thoroughly in cold water and drain.
- 2 In a large pot, bring the water to a boil.
- 3 Add the washed barley to the boiling water and cook until the barley is tender, about 30 minutes.
- 4 Remove the pot from heat and let it cool to room temperature.
- 5 Once cooled, add the starter yeast or leftover Chang to the barley mixture.
- 6 Cover the pot with a clean cloth and let it ferment at room temperature for 2-3 days.
- 7 After fermentation, strain the liquid from the barley using a fine mesh sieve or cheesecloth.
- 8 Transfer the liquid to a clean container and refrigerate before serving.
Tips
For a stronger flavor, ferment the Chang for an additional day.
