Ingredients
| 500 grams | pork shoulder or pork belly |
| 2 tablespoons | hoisin sauce |
| 2 tablespoons | soy sauce |
| 2 tablespoons | honey |
| 1 tablespoon | oyster sauce |
| 1 tablespoon | Shaoxing wine or dry sherry |
| 1 tablespoon | sugar |
| 1 teaspoon | five-spice powder |
| 1 teaspoon | sesame oil |
| 2 cloves | garlic, minced |
| 1 teaspoon | red food coloring (optional) |
Instructions
- 1 Cut the pork into long strips, about 2 inches wide.
- 2 In a bowl, combine hoisin sauce, soy sauce, honey, oyster sauce, Shaoxing wine, sugar, five-spice powder, sesame oil, minced garlic, and red food coloring if using.
- 3 Add the pork strips to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.
- 4 Preheat the oven to 200°C (400°F).
- 5 Place a wire rack over a baking tray lined with foil. Arrange the marinated pork strips on the rack.
- 6 Roast in the preheated oven for 25 minutes.
- 7 Remove the pork from the oven, brush with additional honey, and flip the strips.
- 8 Return to the oven and roast for another 15-20 minutes until the pork is cooked through and slightly charred.
- 9 Let the char siu rest for a few minutes before slicing and serving.
Tips
For a more authentic flavor, try using maltose instead of honey for glazing.
