Ingredients
| 1 cup | basmati rice |
| 1/2 cup | split black gram (urad dal) |
| 1/4 cup | split green gram (moong dal) |
| 1 tablespoon | ghee |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | garam masala |
| 1 | bay leaf |
| 1 | small onion, finely chopped |
| 1 | tomato, chopped |
| 2 cups | water |
| — | salt to taste |
| — | fresh coriander leaves for garnish |
Instructions
- 1 Wash and soak the basmati rice, urad dal, and moong dal together for 30 minutes.
- 2 Heat ghee in a pressure cooker over medium heat.
- 3 Add cumin seeds and bay leaf, and sauté until the seeds crackle.
- 4 Add the chopped onion and sauté until golden brown.
- 5 Add the chopped tomato and cook until soft.
- 6 Stir in turmeric powder, red chili powder, and garam masala.
- 7 Drain the soaked rice and dals, and add them to the cooker.
- 8 Add salt and water, and mix well.
- 9 Close the lid of the pressure cooker and cook for 2 whistles.
- 10 Let the pressure release naturally, then open the lid.
- 11 Fluff the chaudha with a fork and garnish with fresh coriander leaves before serving.
Tips
For extra flavour, use whole spices in the oil first.
