Ingredients

1 cup basmati rice
1/2 cup split black gram (urad dal)
1/4 cup split green gram (moong dal)
1 tablespoon ghee
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1 bay leaf
1 small onion, finely chopped
1 tomato, chopped
2 cups water
salt to taste
fresh coriander leaves for garnish

Instructions

  1. 1 Wash and soak the basmati rice, urad dal, and moong dal together for 30 minutes.
  2. 2 Heat ghee in a pressure cooker over medium heat.
  3. 3 Add cumin seeds and bay leaf, and sauté until the seeds crackle.
  4. 4 Add the chopped onion and sauté until golden brown.
  5. 5 Add the chopped tomato and cook until soft.
  6. 6 Stir in turmeric powder, red chili powder, and garam masala.
  7. 7 Drain the soaked rice and dals, and add them to the cooker.
  8. 8 Add salt and water, and mix well.
  9. 9 Close the lid of the pressure cooker and cook for 2 whistles.
  10. 10 Let the pressure release naturally, then open the lid.
  11. 11 Fluff the chaudha with a fork and garnish with fresh coriander leaves before serving.

Tips

For extra flavour, use whole spices in the oil first.
