Ingredients

2 cups fresh amaranth leaves (chech)
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 medium onion, finely chopped
2 cloves garlic, minced
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 green chili, chopped
to taste salt
1 tablespoon lemon juice

Instructions

  1. 1 Wash the amaranth leaves thoroughly under running water and chop them finely.
  2. 2 Heat oil in a pan over medium heat.
  3. 3 Add mustard seeds and cumin seeds to the hot oil and let them splutter.
  4. 4 Add the chopped onion and sauté until it turns golden brown.
  5. 5 Stir in the minced garlic and chopped green chili, and sauté for another minute.
  6. 6 Add turmeric powder and red chili powder, and mix well.
  7. 7 Add the chopped amaranth leaves to the pan and stir to combine.
  8. 8 Cover the pan and let the leaves cook on low heat for about 10 minutes, stirring occasionally.
  9. 9 Once the leaves are cooked, add salt to taste and mix well.
  10. 10 Turn off the heat and add lemon juice. Mix thoroughly before serving.

Tips

Serve with steamed rice or chapati for a complete meal.
