Ingredients
| 2 cups | fresh amaranth leaves (chech) |
| 1 tablespoon | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 medium | onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 | green chili, chopped |
| to taste | salt |
| 1 tablespoon | lemon juice |
Instructions
- 1 Wash the amaranth leaves thoroughly under running water and chop them finely.
- 2 Heat oil in a pan over medium heat.
- 3 Add mustard seeds and cumin seeds to the hot oil and let them splutter.
- 4 Add the chopped onion and sauté until it turns golden brown.
- 5 Stir in the minced garlic and chopped green chili, and sauté for another minute.
- 6 Add turmeric powder and red chili powder, and mix well.
- 7 Add the chopped amaranth leaves to the pan and stir to combine.
- 8 Cover the pan and let the leaves cook on low heat for about 10 minutes, stirring occasionally.
- 9 Once the leaves are cooked, add salt to taste and mix well.
- 10 Turn off the heat and add lemon juice. Mix thoroughly before serving.
Tips
Serve with steamed rice or chapati for a complete meal.
