Chunky brinjal relish — roasted or cooked brinjal mashed with shallots, tomato, tamarind, and Chettinad spices into a thick, semi-smooth accompaniment. Spicier and more complex than a pachadi, gothsu is the essential companion to idiyappam and dosai on a Chettinad breakfast table.

Ingredients
| 2 tablespoons | oil |
| 1 | large onion, finely chopped |
| 1 | large tomato, finely chopped |
| 1 cup | tamarind water |
| 1 cup | water |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | urad dal |
| 1 teaspoon | chana dal |
| 2 | green chilies, slit |
| 1 teaspoon | sambar powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | jaggery |
| — | salt to taste |
| 1 sprig | curry leaves |
| 2 tablespoons | coriander leaves, chopped |
Instructions
- 1 Heat oil in a pan over medium heat.
- 2 Add mustard seeds, urad dal, and chana dal, and sauté until the dals turn golden brown.
- 3 Add the green chilies and curry leaves, and sauté for a few seconds.
- 4 Add the chopped onion and sauté until it turns translucent.
- 5 Add the chopped tomato and cook until it becomes soft and mushy.
- 6 Pour in the tamarind water and regular water, and bring it to a boil.
- 7 Add sambar powder, turmeric powder, jaggery, and salt to taste.
- 8 Allow the mixture to simmer on low heat for 10-15 minutes until it thickens slightly.
- 9 Garnish with chopped coriander leaves before serving.
Tips
For a spicier gothsu, add more green chilies or a pinch of red chili powder.
