Chunky brinjal relish — roasted or cooked brinjal mashed with shallots, tomato, tamarind, and Chettinad spices into a thick, semi-smooth accompaniment. Spicier and more complex than a pachadi, gothsu is the essential companion to idiyappam and dosai on a Chettinad breakfast table.

Ingredients

2 tablespoons oil
1 large onion, finely chopped
1 large tomato, finely chopped
1 cup tamarind water
1 cup water
1 teaspoon mustard seeds
1 teaspoon urad dal
1 teaspoon chana dal
2 green chilies, slit
1 teaspoon sambar powder
1 teaspoon turmeric powder
1 teaspoon jaggery
salt to taste
1 sprig curry leaves
2 tablespoons coriander leaves, chopped

Instructions

  1. 1 Heat oil in a pan over medium heat.
  2. 2 Add mustard seeds, urad dal, and chana dal, and sauté until the dals turn golden brown.
  3. 3 Add the green chilies and curry leaves, and sauté for a few seconds.
  4. 4 Add the chopped onion and sauté until it turns translucent.
  5. 5 Add the chopped tomato and cook until it becomes soft and mushy.
  6. 6 Pour in the tamarind water and regular water, and bring it to a boil.
  7. 7 Add sambar powder, turmeric powder, jaggery, and salt to taste.
  8. 8 Allow the mixture to simmer on low heat for 10-15 minutes until it thickens slightly.
  9. 9 Garnish with chopped coriander leaves before serving.

Tips

For a spicier gothsu, add more green chilies or a pinch of red chili powder.
