The Chhattisgarhi version of a pan-tribal Central Indian sweet (similar to Bihar's anarsa and Tamil Nadu's adirasam), made for festivals using local aromatic rice.

Ingredients

1 cup | Basmati rice |

1 cup | Jaggery |
|
1 cup | Water |
|
1 tablespoon | Ghee |
|
1 teaspoon | Fennel Seed |
|
1 pinch | Salt |

— | Oil , for deep frying |
Instructions
- 1 Wash and soak the basmati rice in water for 2-3 hours.
- 2 Drain the water and spread the rice on a clean cloth to dry completely.
- 3 Grind the dried rice into a fine powder using a grinder.
- 4 In a pan, heat the jaggery with 1 cup of water until it melts completely.
- 5 Strain the jaggery syrup to remove any impurities.
- 6 In a mixing bowl, combine the rice flour, jaggery syrup, ghee, fennel seeds, and a pinch of salt to form a dough.
- 7 Divide the dough into small, equal-sized balls.
- 8 Heat oil in a deep frying pan over medium heat.
- 9 Deep fry the dough balls until they are golden brown and crispy.
- 10 Remove the Arsa from the oil and drain on paper towels to remove excess oil.
- 11 Serve warm or at room temperature.
Tips
Ensure the rice is completely dry before grinding to get a fine powder.
