Ingredients

200 grams chhena (fresh paneer)
2 tablespoons mustard oil
1 teaspoon panch phoron
1 medium onion, finely chopped
1 medium tomato, chopped
1 teaspoon ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon red chili powder
1 cup water
1 handful fresh coriander leaves, chopped
salt to taste

Instructions

  1. 1 Heat mustard oil in a pan until it starts to smoke slightly.
  2. 2 Add panch phoron and let it splutter.
  3. 3 Add the chopped onions and sauté until they turn golden brown.
  4. 4 Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  5. 5 Add chopped tomatoes and cook until they become soft and mushy.
  6. 6 Mix in turmeric powder, cumin powder, coriander powder, and red chili powder.
  7. 7 Cook the spices for a couple of minutes, stirring continuously.
  8. 8 Add the chhena pieces and gently mix them with the spices.
  9. 9 Pour in a cup of water and add salt to taste.
  10. 10 Cover the pan and let it simmer for about 10 minutes on low heat.
  11. 11 Garnish with fresh coriander leaves before serving.

Tips

For a richer taste, fry the chhena pieces until golden before adding them to the curry.
