Ingredients

1 cup jaggery
1 cup water
1 cup rice flour
1 tablespoon ghee
1 teaspoon cardamom powder
1 tablespoon sesame seeds
1 pinch salt

Instructions

  1. 1 In a pan, melt the jaggery with water over medium heat until it dissolves completely.
  2. 2 Strain the jaggery syrup to remove any impurities and return it to the pan.
  3. 3 Add ghee, cardamom powder, and a pinch of salt to the jaggery syrup and bring it to a boil.
  4. 4 Gradually add rice flour to the boiling syrup, stirring continuously to avoid lumps.
  5. 5 Cook the mixture on low heat until it thickens and leaves the sides of the pan.
  6. 6 Remove from heat and let it cool slightly.
  7. 7 Grease your palms with ghee and shape the mixture into small balls or discs.
  8. 8 Sprinkle sesame seeds on top of each Chigali and press gently to adhere.
  9. 9 Allow them to cool completely before serving.
