Ingredients
| 1 cup | urad dal (split black gram) |
| 1 cup | chana dal (split chickpeas) |
| 1 cup | yogurt |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | ginger paste |
| 1 teaspoon | green chili paste |
| 1 teaspoon | red chili powder |
| 1 teaspoon | black salt |
| 1 tablespoon | tamarind chutney |
| 1 tablespoon | coriander chutney |
| — | salt to taste |
| — | oil for frying |
| — | fresh coriander leaves for garnish |
Instructions
- 1 Wash and soak the urad dal and chana dal together in water for 4-5 hours.
- 2 Drain the water and grind the dals into a smooth batter using minimal water.
- 3 Add cumin seeds, ginger paste, green chili paste, and salt to the batter. Mix well.
- 4 Heat oil in a deep frying pan over medium heat.
- 5 Take small portions of the batter and shape them into round vadas.
- 6 Deep fry the vadas in hot oil until they are golden brown and crispy.
- 7 Remove the vadas from oil and place them on paper towels to drain excess oil.
- 8 In a bowl, whisk the yogurt until smooth and add black salt and red chili powder.
- 9 Soak the fried vadas in warm water for 5-10 minutes, then gently squeeze out the water.
- 10 Place the vadas in a serving dish and pour the spiced yogurt over them.
- 11 Drizzle tamarind chutney and coriander chutney over the yogurt-covered vadas.
- 12 Garnish with fresh coriander leaves before serving.
Tips
Ensure the oil is hot enough before frying the vadas to make them crispy.
