Ingredients

1 cup urad dal (split black gram)
1 cup chana dal (split chickpeas)
1 cup yogurt
1 teaspoon cumin seeds
1 teaspoon ginger paste
1 teaspoon green chili paste
1 teaspoon red chili powder
1 teaspoon black salt
1 tablespoon tamarind chutney
1 tablespoon coriander chutney
salt to taste
oil for frying
fresh coriander leaves for garnish

Instructions

  1. 1 Wash and soak the urad dal and chana dal together in water for 4-5 hours.
  2. 2 Drain the water and grind the dals into a smooth batter using minimal water.
  3. 3 Add cumin seeds, ginger paste, green chili paste, and salt to the batter. Mix well.
  4. 4 Heat oil in a deep frying pan over medium heat.
  5. 5 Take small portions of the batter and shape them into round vadas.
  6. 6 Deep fry the vadas in hot oil until they are golden brown and crispy.
  7. 7 Remove the vadas from oil and place them on paper towels to drain excess oil.
  8. 8 In a bowl, whisk the yogurt until smooth and add black salt and red chili powder.
  9. 9 Soak the fried vadas in warm water for 5-10 minutes, then gently squeeze out the water.
  10. 10 Place the vadas in a serving dish and pour the spiced yogurt over them.
  11. 11 Drizzle tamarind chutney and coriander chutney over the yogurt-covered vadas.
  12. 12 Garnish with fresh coriander leaves before serving.

Tips

Ensure the oil is hot enough before frying the vadas to make them crispy.
