Ingredients
| 6 | large green chillies |
| 1 cup | gram flour (besan) |
| 2 tablespoons | rice flour |
| 1 teaspoon | red chilli powder |
| 1/2 teaspoon | turmeric powder |
| 1/2 teaspoon | cumin seeds |
| 1/4 teaspoon | asafoetida (hing) |
| — | salt to taste |
| 1 teaspoon | carom seeds (ajwain) |
| 1 cup | water |
| — | oil for deep frying |
Instructions
- 1 Wash the green chillies thoroughly and pat them dry.
- 2 Make a slit in each chilli lengthwise, ensuring not to cut them completely.
- 3 In a mixing bowl, combine gram flour, rice flour, red chilli powder, turmeric powder, cumin seeds, asafoetida, salt, and carom seeds.
- 4 Gradually add water to the dry ingredients, mixing to form a smooth, thick batter.
- 5 Heat oil in a deep frying pan over medium heat.
- 6 Dip each slit chilli into the batter, ensuring it is well-coated.
- 7 Carefully drop the batter-coated chillies into the hot oil.
- 8 Fry the chillies until they are golden brown and crispy, turning occasionally.
- 9 Remove the chillies from the oil and drain them on paper towels to remove excess oil.
- 10 Serve hot with chutney or sauce of your choice.
Tips
For a spicier version, you can add a pinch of black pepper to the batter.
