Ingredients

6 large green chillies
1 cup gram flour (besan)
2 tablespoons rice flour
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida (hing)
salt to taste
1 teaspoon carom seeds (ajwain)
1 cup water
oil for deep frying

Instructions

  1. 1 Wash the green chillies thoroughly and pat them dry.
  2. 2 Make a slit in each chilli lengthwise, ensuring not to cut them completely.
  3. 3 In a mixing bowl, combine gram flour, rice flour, red chilli powder, turmeric powder, cumin seeds, asafoetida, salt, and carom seeds.
  4. 4 Gradually add water to the dry ingredients, mixing to form a smooth, thick batter.
  5. 5 Heat oil in a deep frying pan over medium heat.
  6. 6 Dip each slit chilli into the batter, ensuring it is well-coated.
  7. 7 Carefully drop the batter-coated chillies into the hot oil.
  8. 8 Fry the chillies until they are golden brown and crispy, turning occasionally.
  9. 9 Remove the chillies from the oil and drain them on paper towels to remove excess oil.
  10. 10 Serve hot with chutney or sauce of your choice.

Tips

For a spicier version, you can add a pinch of black pepper to the batter.
