Ingredients

300 grams pork, cut into small cubes
1 tablespoon vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2 tablespoons ginger-garlic paste
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon black pepper powder
2 medium onions, thinly sliced
2 medium green chilies, slit
1 tablespoon vinegar
1 teaspoon salt or to taste
2 tablespoons coriander leaves, chopped

Instructions

  1. 1 Heat the vegetable oil in a pan over medium heat.
  2. 2 Add mustard seeds and cumin seeds, and let them splutter.
  3. 3 Add the ginger-garlic paste and sauté until the raw smell disappears.
  4. 4 Add the pork cubes and sauté until they are browned on all sides.
  5. 5 Stir in red chili powder, turmeric powder, and black pepper powder, and mix well.
  6. 6 Add sliced onions and green chilies, and sauté until the onions turn translucent.
  7. 7 Add vinegar and salt, and mix well to coat the pork evenly.
  8. 8 Cover and cook on low heat for about 20 minutes, stirring occasionally, until the pork is cooked through and the mixture is dry.
  9. 9 Garnish with chopped coriander leaves before serving.

Tips

For an authentic taste, use Coorgi vinegar or kachampuli if available.
