Ingredients
| 300 grams | pork, cut into small cubes |
| 1 tablespoon | vegetable oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 2 tablespoons | ginger-garlic paste |
| 2 teaspoons | red chili powder |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | black pepper powder |
| 2 medium | onions, thinly sliced |
| 2 medium | green chilies, slit |
| 1 tablespoon | vinegar |
| 1 teaspoon | salt or to taste |
| 2 tablespoons | coriander leaves, chopped |
Instructions
- 1 Heat the vegetable oil in a pan over medium heat.
- 2 Add mustard seeds and cumin seeds, and let them splutter.
- 3 Add the ginger-garlic paste and sauté until the raw smell disappears.
- 4 Add the pork cubes and sauté until they are browned on all sides.
- 5 Stir in red chili powder, turmeric powder, and black pepper powder, and mix well.
- 6 Add sliced onions and green chilies, and sauté until the onions turn translucent.
- 7 Add vinegar and salt, and mix well to coat the pork evenly.
- 8 Cover and cook on low heat for about 20 minutes, stirring occasionally, until the pork is cooked through and the mixture is dry.
- 9 Garnish with chopped coriander leaves before serving.
Tips
For an authentic taste, use Coorgi vinegar or kachampuli if available.
