Ingredients

Dried Shrimp 100 grams Dried Shrimp
Onion 1 medium Onion , finely chopped
Garlic 2 cloves Garlic , minced
Ginger 1 inch Ginger , grated
Green Chili 2 pieces Green Chili , chopped
Tomato 1 medium Tomato , chopped
mustard oil 2 tablespoons Mustard oil
turmeric powder 0.5 teaspoon Turmeric powder
salt Salt , to taste
Cilantro 1 handful Cilantro , chopped

Instructions

  1. 1 Rinse the chingri shutki under running water to remove any surface dust.
  2. 2 Soak the chingri shutki in warm water for about 10 minutes to soften.
  3. 3 Drain the water and pat dry the chingri shutki with a paper towel.
  4. 4 Heat mustard oil in a pan over medium heat.
  5. 5 Add chopped onions and sauté until they turn golden brown.
  6. 6 Add minced garlic, grated ginger, and chopped green chilies. Sauté for another 2-3 minutes.
  7. 7 Add chopped tomato and cook until the tomato softens and oil starts to separate.
  8. 8 Add the soaked chingri shutki to the pan and stir well.
  9. 9 Sprinkle turmeric powder and salt, and mix thoroughly.
  10. 10 Cook for 5-7 minutes on low heat, stirring occasionally to prevent sticking.
  11. 11 Turn off the heat and let it cool slightly.
  12. 12 Transfer the mixture to a bowl and mash it with a fork or a traditional 'dal ghotni' (wooden masher) until well combined.
  13. 13 Garnish with chopped coriander leaves before serving.

Tips

For a smokier flavor, roast the dried shrimp lightly before soaking.
