Ingredients
| 100 grams | chingri shutki (dried shrimp) |
| 1 medium | onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, grated |
| 2 pieces | green chilies, chopped |
| 1 medium | tomato, chopped |
| 2 tablespoons | mustard oil |
| 0.5 teaspoon | turmeric powder |
| — | salt to taste |
| 1 handful | coriander leaves, chopped |
Instructions
- 1 Rinse the chingri shutki under running water to remove any surface dust.
- 2 Soak the chingri shutki in warm water for about 10 minutes to soften.
- 3 Drain the water and pat dry the chingri shutki with a paper towel.
- 4 Heat mustard oil in a pan over medium heat.
- 5 Add chopped onions and sauté until they turn golden brown.
- 6 Add minced garlic, grated ginger, and chopped green chilies. Sauté for another 2-3 minutes.
- 7 Add chopped tomato and cook until the tomato softens and oil starts to separate.
- 8 Add the soaked chingri shutki to the pan and stir well.
- 9 Sprinkle turmeric powder and salt, and mix thoroughly.
- 10 Cook for 5-7 minutes on low heat, stirring occasionally to prevent sticking.
- 11 Turn off the heat and let it cool slightly.
- 12 Transfer the mixture to a bowl and mash it with a fork or a traditional 'dal ghotni' (wooden masher) until well combined.
- 13 Garnish with chopped coriander leaves before serving.
Tips
For a smokier flavor, roast the dried shrimp lightly before soaking.
