Ingredients

1 cup raw rice
1 cup freshly grated coconut
1 cup water
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon baking soda
as needed oil for greasing

Instructions

  1. 1 Wash the raw rice thoroughly and soak it in water for at least 3 hours.
  2. 2 Drain the soaked rice and transfer it to a blender.
  3. 3 Add freshly grated coconut, water, sugar, salt, and baking soda to the blender.
  4. 4 Blend the mixture until you get a smooth batter with a pouring consistency.
  5. 5 Heat a non-stick pan or a cast-iron skillet on medium heat and lightly grease it with oil.
  6. 6 Pour a ladleful of batter onto the center of the pan and let it spread naturally to form a small pancake.
  7. 7 Cover the pan with a lid and let the pitha cook on low heat for about 5-6 minutes until the top is set and the edges start to lift.
  8. 8 Remove the lid and check if the pitha is cooked through. It should be soft and fluffy.
  9. 9 Carefully remove the pitha from the pan and repeat the process with the remaining batter.
  10. 10 Serve the Chitau Pitha warm with jaggery or any accompaniment of your choice.

Tips

For a richer taste, you can add a little bit of cardamom powder to the batter.
