Ingredients
| 1 cup | raw rice |
| 1 cup | freshly grated coconut |
| 1 cup | water |
| 1 teaspoon | sugar |
| 1/2 teaspoon | salt |
| 1/4 teaspoon | baking soda |
| as needed | oil for greasing |
Instructions
- 1 Wash the raw rice thoroughly and soak it in water for at least 3 hours.
- 2 Drain the soaked rice and transfer it to a blender.
- 3 Add freshly grated coconut, water, sugar, salt, and baking soda to the blender.
- 4 Blend the mixture until you get a smooth batter with a pouring consistency.
- 5 Heat a non-stick pan or a cast-iron skillet on medium heat and lightly grease it with oil.
- 6 Pour a ladleful of batter onto the center of the pan and let it spread naturally to form a small pancake.
- 7 Cover the pan with a lid and let the pitha cook on low heat for about 5-6 minutes until the top is set and the edges start to lift.
- 8 Remove the lid and check if the pitha is cooked through. It should be soft and fluffy.
- 9 Carefully remove the pitha from the pan and repeat the process with the remaining batter.
- 10 Serve the Chitau Pitha warm with jaggery or any accompaniment of your choice.
Tips
For a richer taste, you can add a little bit of cardamom powder to the batter.
