Ingredients

Semolina 1 cup Semolina
Rice 1 cup Rice , raw
ghee 2 tablespoons Ghee
oil 2 tablespoons Oil
Mustard Seed 1 teaspoon Mustard Seed
urad dal 1 teaspoon Urad dal
chana dal 1 teaspoon Chana dal
asafoetida 1 pinch Asafoetida
Green Chili 2 Green Chili , chopped
Onion 1 Onion , finely chopped
Tomato 1 Tomato , finely chopped
Carrot 1 Carrot , grated
Bell Pepper 1 Bell Pepper , finely chopped
Mixed Vegetable 1 cup Mixed Vegetable , like drumsticks, brinjal, and potatoes
turmeric powder 1 teaspoon Turmeric powder
water 2 cups Water
salt to taste Salt
Cilantro 2 tablespoons Cilantro , chopped
lemon juice 1 tablespoon Lemon juice
jaggery 1 cup Jaggery , grated
Tamarind 1 cup Tamarind , pulp
sambar powder 2 tablespoons Sambar powder
Curry Leaf 1 tablespoon Curry Leaf

Instructions

  1. 1 Dry roast the semolina in a pan until it turns light golden. Set aside.
  2. 2 Cook the rice with 2 cups of water until soft and fluffy. Set aside.
  3. 3 In a pan, heat 1 tablespoon of ghee and 1 tablespoon of oil.
  4. 4 Add mustard seeds, urad dal, chana dal, and a pinch of asafoetida. Let them splutter.
  5. 5 Add green chilies, onion, and sauté until the onion turns translucent.
  6. 6 Add tomato, carrot, capsicum, and mixed vegetables. Cook until soft.
  7. 7 Add turmeric powder and salt to taste.
  8. 8 Add 2 cups of water and bring it to a boil.
  9. 9 Slowly add the roasted semolina, stirring continuously to avoid lumps.
  10. 10 Cook until the semolina absorbs the water and thickens.
  11. 11 Stir in coriander leaves and lemon juice. Set aside the upma.
  12. 12 In another pan, heat the remaining ghee and oil.
  13. 13 Add mustard seeds, curry leaves, and let them splutter.
  14. 14 Add jaggery, tamarind pulp, sambar powder, and salt to taste.
  15. 15 Cook the mixture until it thickens to a sauce-like consistency.
  16. 16 Mix the cooked rice with this sauce, ensuring the rice is well coated.
  17. 17 Serve the upma and rice side by side on a plate for the traditional Chow Chow Bath experience.

Tips

Roasting the semolina well prevents it from becoming sticky. Adjust the jaggery and tamarind according to your taste preference.
