Ingredients
| 2 cups | chura (flattened rice) |
| 1 cup | spinach leaves |
| 1 cup | mustard greens |
| 1 medium | onion, finely chopped |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 1 medium | tomato, chopped |
| 2 tablespoons | mustard oil |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | cumin seeds |
| — | salt to taste |
| — | water as needed |
Instructions
- 1 Wash the chura thoroughly in water and soak it for 10 minutes. Drain and set aside.
- 2 Heat mustard oil in a pan over medium heat. Add cumin seeds and let them splutter.
- 3 Add minced garlic and ginger, sauté until fragrant.
- 4 Add the chopped onions and cook until they turn translucent.
- 5 Stir in the chopped tomatoes and cook until they soften.
- 6 Add turmeric powder, red chili powder, and salt. Mix well.
- 7 Add the spinach leaves and mustard greens. Cook until the greens wilt.
- 8 Add the soaked chura to the pan, mixing well with the vegetables.
- 9 Sprinkle a little water if needed to moisten the mixture.
- 10 Cook for another 5-7 minutes, stirring occasionally, until the chura is well cooked and flavors are combined.
- 11 Serve hot as a side dish or a light meal.
Tips
For a more authentic taste, use fresh mustard greens and adjust the spice level to your preference.
