Ingredients

2 cups chura (flattened rice)
1 cup spinach leaves
1 cup mustard greens
1 medium onion, finely chopped
2 cloves garlic, minced
1 inch ginger, minced
1 medium tomato, chopped
2 tablespoons mustard oil
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin seeds
salt to taste
water as needed

Instructions

  1. 1 Wash the chura thoroughly in water and soak it for 10 minutes. Drain and set aside.
  2. 2 Heat mustard oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. 3 Add minced garlic and ginger, sauté until fragrant.
  4. 4 Add the chopped onions and cook until they turn translucent.
  5. 5 Stir in the chopped tomatoes and cook until they soften.
  6. 6 Add turmeric powder, red chili powder, and salt. Mix well.
  7. 7 Add the spinach leaves and mustard greens. Cook until the greens wilt.
  8. 8 Add the soaked chura to the pan, mixing well with the vegetables.
  9. 9 Sprinkle a little water if needed to moisten the mixture.
  10. 10 Cook for another 5-7 minutes, stirring occasionally, until the chura is well cooked and flavors are combined.
  11. 11 Serve hot as a side dish or a light meal.

Tips

For a more authentic taste, use fresh mustard greens and adjust the spice level to your preference.
