Ingredients

1 cup rice
4 cups water
1 cup yogurt
salt to taste
1 tablespoon mustard oil
1 teaspoon mustard seeds
1 dried red chili
1 teaspoon cumin seeds
1 tablespoon chopped ginger
2 tablespoons chopped coriander leaves
1 green chili, chopped

Instructions

  1. 1 Wash the rice thoroughly and drain the water.
  2. 2 In a pot, bring 4 cups of water to a boil.
  3. 3 Add the rice to the boiling water and cook until soft and fully cooked.
  4. 4 Once cooked, drain any excess water and let the rice cool completely.
  5. 5 In a large bowl, mix the cooled rice with yogurt and salt to taste.
  6. 6 In a small pan, heat mustard oil until it begins to smoke slightly.
  7. 7 Add mustard seeds, dried red chili, cumin seeds, and chopped ginger to the hot oil and sauté until the seeds start to splutter.
  8. 8 Pour the tempering over the rice and yogurt mixture.
  9. 9 Garnish with chopped coriander leaves and green chili.
  10. 10 Mix well before serving.

Tips

For a more authentic flavor, allow the rice and yogurt mixture to ferment overnight before serving.
