Ingredients
| 1 cup | rice |
| 4 cups | water |
| 1 cup | yogurt |
| — | salt to taste |
| 1 tablespoon | mustard oil |
| 1 teaspoon | mustard seeds |
| 1 | dried red chili |
| 1 teaspoon | cumin seeds |
| 1 tablespoon | chopped ginger |
| 2 tablespoons | chopped coriander leaves |
| 1 | green chili, chopped |
Instructions
- 1 Wash the rice thoroughly and drain the water.
- 2 In a pot, bring 4 cups of water to a boil.
- 3 Add the rice to the boiling water and cook until soft and fully cooked.
- 4 Once cooked, drain any excess water and let the rice cool completely.
- 5 In a large bowl, mix the cooled rice with yogurt and salt to taste.
- 6 In a small pan, heat mustard oil until it begins to smoke slightly.
- 7 Add mustard seeds, dried red chili, cumin seeds, and chopped ginger to the hot oil and sauté until the seeds start to splutter.
- 8 Pour the tempering over the rice and yogurt mixture.
- 9 Garnish with chopped coriander leaves and green chili.
- 10 Mix well before serving.
Tips
For a more authentic flavor, allow the rice and yogurt mixture to ferment overnight before serving.
