Ingredients
| 1 cup | poha (flattened rice) |
| 1 cup | curd (yogurt) |
| 1 small | onion, finely chopped |
| 1 small | tomato, finely chopped |
| 1 small | green chili, finely chopped |
| 2 tablespoons | peanuts |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 5-6 | curry leaves |
| 1 tablespoon | oil |
| — | salt to taste |
| — | sugar to taste |
| 2 tablespoons | fresh coriander leaves, chopped |
Instructions
- 1 Rinse the poha in a colander under running water and let it drain completely.
- 2 In a bowl, mix the poha with curd, salt, and a pinch of sugar. Set aside.
- 3 Heat oil in a pan over medium heat. Add peanuts and fry until golden brown. Remove and set aside.
- 4 In the same pan, add mustard seeds and let them splutter.
- 5 Add cumin seeds and curry leaves, sauté for a few seconds.
- 6 Add chopped onion and green chili, sauté until the onion turns translucent.
- 7 Add chopped tomato and cook until soft.
- 8 Add the poha-curd mixture to the pan and mix well.
- 9 Cook for 2-3 minutes until everything is combined and heated through.
- 10 Garnish with fried peanuts and chopped coriander leaves before serving.
Tips
Ensure the poha is not soaked for too long to avoid it becoming mushy. Adjust the amount of curd based on desired consistency.
