Whipped morning dew cream — one of the most unusual and ephemeral desserts in India, sold only on winter mornings in Old Delhi's Chandni Chowk. Full-fat milk is left outdoors on winter nights, collecting overnight dew and cold air, then whisked for hours until an incredibly light, airy, almost foam-like sweet cream forms. Piled high into a clay cup, dusted with powdered sugar, saffron, and crushed pistachios. It melts on the tongue in seconds. Made only when Delhi temperatures fall below 10°C — no refrigeration or emulsifier can replicate the cold night air's effect.

Ingredients
| 1 liter | full cream milk |
| 1/4 cup | powdered sugar |
| 1/4 teaspoon | saffron strands |
| 1/4 teaspoon | cardamom powder |
| 1/4 cup | khoya (mawa) |
| 1 tablespoon | pistachios, chopped |
| 1 tablespoon | almonds, chopped |
| 1 tablespoon | rose petals, dried |
Instructions
- 1 Boil the milk in a large pan until it reduces to half its original volume.
- 2 Add saffron strands and cardamom powder to the milk and mix well.
- 3 Allow the milk to cool down to room temperature.
- 4 Once cooled, whisk the milk until it becomes frothy and light.
- 5 Gently fold in the powdered sugar and khoya into the frothy milk.
- 6 Pour the mixture into a shallow dish and refrigerate for at least 3-4 hours or until set.
- 7 Before serving, garnish with chopped pistachios, almonds, and dried rose petals.
Tips
For best results, prepare this dish in a cool environment to help the milk froth better.
