Ingredients
| 1 cup | rice |
| 1/2 cup | urad dal |
| 1 cup | sugar |
| 1 cup | water |
| 1/2 teaspoon | cardamom powder |
| 2 tablespoons | ghee |
| 2 tablespoons | chopped nuts (almonds and cashews) |
| — | oil for deep frying |
Instructions
- 1 Wash and soak the rice and urad dal separately for 4-5 hours.
- 2 Drain the water and grind the rice and urad dal together to form a smooth batter. The consistency should be similar to dosa batter.
- 3 Allow the batter to ferment overnight or for 8-10 hours.
- 4 In a pan, heat ghee and fry the chopped nuts until golden. Set aside.
- 5 Prepare sugar syrup by boiling sugar and water together until the sugar dissolves completely. Add cardamom powder and keep it warm.
- 6 Heat oil in a deep pan for frying.
- 7 Take a small portion of the fermented batter and shape it into a small ball or patty.
- 8 Deep fry the batter balls in hot oil until they are golden brown and crispy.
- 9 Remove the fried dehroris and immediately dip them into the warm sugar syrup. Let them soak for 2-3 minutes.
- 10 Garnish with fried nuts and serve warm.
Tips
Ensure the batter is well-fermented for a fluffy texture. Adjust sugar in the syrup to taste.
