Fermented rice sweet fritters — cooked rice soaked overnight in yogurt until lightly fermented, then ground into a smooth batter, shaped into rounds, and deep-fried in oil until puffed and golden-brown. Dusted with powdered sugar and cardamom or soaked in light sugar syrup. The most distinctly Chhattisgarhi sweet, found nowhere else in India.

Ingredients

1 cup rice
1/2 cup urad dal
1 cup sugar
1 cup water
1/2 teaspoon cardamom powder
2 tablespoons ghee
2 tablespoons chopped nuts (almonds and cashews)
oil for deep frying

Instructions

  1. 1 Wash and soak the rice and urad dal separately for 4-5 hours.
  2. 2 Drain the water and grind the rice and urad dal together to form a smooth batter. The consistency should be similar to dosa batter.
  3. 3 Allow the batter to ferment overnight or for 8-10 hours.
  4. 4 In a pan, heat ghee and fry the chopped nuts until golden. Set aside.
  5. 5 Prepare sugar syrup by boiling sugar and water together until the sugar dissolves completely. Add cardamom powder and keep it warm.
  6. 6 Heat oil in a deep pan for frying.
  7. 7 Take a small portion of the fermented batter and shape it into a small ball or patty.
  8. 8 Deep fry the batter balls in hot oil until they are golden brown and crispy.
  9. 9 Remove the fried dehroris and immediately dip them into the warm sugar syrup. Let them soak for 2-3 minutes.
  10. 10 Garnish with fried nuts and serve warm.

Tips

Ensure the batter is well-fermented for a fluffy texture. Adjust sugar in the syrup to taste.
