Ingredients

3 medium potatoes
1 cup fresh coriander leaves
2 tablespoons mustard oil
1 teaspoon cumin seeds
2 green chilies
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 lemon
salt to taste

Instructions

  1. 1 Peel and cube the potatoes into bite-sized pieces.
  2. 2 Finely chop the fresh coriander leaves and green chilies.
  3. 3 Heat mustard oil in a pan over medium heat.
  4. 4 Add cumin seeds and let them splutter.
  5. 5 Add the chopped green chilies and sauté for a minute.
  6. 6 Add the cubed potatoes and stir well.
  7. 7 Sprinkle turmeric powder, coriander powder, and salt over the potatoes.
  8. 8 Mix well to coat the potatoes with the spices.
  9. 9 Cover the pan and cook on low heat until the potatoes are tender, stirring occasionally.
  10. 10 Once the potatoes are cooked, add the chopped coriander leaves and mix well.
  11. 11 Squeeze fresh lemon juice over the dish and give it a final stir.
  12. 12 Serve hot with roti or rice.

Tips

For a richer flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.
