Ingredients

| 1 cup | fresh coriander leaves |
| 2 tablespoons | mustard oil |
| 1 teaspoon | cumin seeds |
| 2 | green chilies |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | coriander powder |
| 1 | lemon |
| — | salt to taste |
Instructions
- 1 Peel and cube the potatoes into bite-sized pieces.
- 2 Finely chop the fresh coriander leaves and green chilies.
- 3 Heat mustard oil in a pan over medium heat.
- 4 Add cumin seeds and let them splutter.
- 5 Add the chopped green chilies and sauté for a minute.
- 6 Add the cubed potatoes and stir well.
- 7 Sprinkle turmeric powder, coriander powder, and salt over the potatoes.
- 8 Mix well to coat the potatoes with the spices.
- 9 Cover the pan and cook on low heat until the potatoes are tender, stirring occasionally.
- 10 Once the potatoes are cooked, add the chopped coriander leaves and mix well.
- 11 Squeeze fresh lemon juice over the dish and give it a final stir.
- 12 Serve hot with roti or rice.
Tips
For a richer flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.
