Ingredients

1 cup jowar flour
1 cup wheat flour
1/2 cup besan (gram flour)
1 medium onion, finely chopped
1 medium tomato, finely chopped
2 tablespoons fresh coriander leaves, chopped
1 teaspoon cumin seeds
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon ajwain (carom seeds)
1 teaspoon sesame seeds
1 teaspoon ginger-garlic paste
1 teaspoon salt
2 tablespoons oil
water as needed

Instructions

  1. 1 In a large mixing bowl, combine jowar flour, wheat flour, and besan.
  2. 2 Add the chopped onion, tomato, coriander leaves, cumin seeds, red chili powder, turmeric powder, ajwain, sesame seeds, ginger-garlic paste, and salt.
  3. 3 Mix all the ingredients well.
  4. 4 Add water gradually and knead into a soft dough. The dough should be pliable but not sticky.
  5. 5 Divide the dough into equal portions and roll each portion into a ball.
  6. 6 Flatten each ball slightly and roll it out into a thick disc using a rolling pin.
  7. 7 Heat a tawa or flat pan over medium heat and drizzle a little oil.
  8. 8 Place the rolled dhapate on the hot tawa and cook until golden brown spots appear on one side.
  9. 9 Flip it over and cook the other side, adding a little more oil if needed.
  10. 10 Repeat the process with the remaining dough balls.
  11. 11 Serve hot with yogurt or pickle.

Tips

Ensure the dough is not too dry; adjust the water quantity as needed for a soft dough.
