Raw garlic and dried red chilli chutney — several cloves of raw garlic pounded with dried red chilli, salt, and a small amount of mustard oil into a sharp, fiery, pungent coarse paste. The raw garlic is not cooked or mellowed — its full intensity is preserved. Eaten with everything: rice, roti, khatte aloo, kalari, and any dal. The everyday chutney of Dogra households, especially in the rural and hillside areas where garlic grows prolifically.

Ingredients

Garlic 10 cloves Garlic , finely chopped
mustard oil 2 tablespoons Mustard oil
red chili powder 2 teaspoons Red chili powder
Cumin 1 teaspoon Cumin , seeds
Coriander Seed 1 teaspoon Coriander Seed
salt 1 teaspoon Salt
lemon juice 1 tablespoon Lemon juice

Instructions

  1. 1 Peel the garlic cloves and crush them using a mortar and pestle.
  2. 2 Heat mustard oil in a pan until it starts to smoke, then let it cool slightly.
  3. 3 Add cumin seeds and coriander seeds to the oil and let them splutter.
  4. 4 Add the crushed garlic to the pan and sauté until golden brown.
  5. 5 Remove the pan from heat and add red chili powder and salt. Mix well.
  6. 6 Allow the mixture to cool, then add lemon juice and mix thoroughly.
  7. 7 Transfer the chutney to a serving bowl.

Tips

Adjust the amount of red chili powder according to your spice preference.
