The raw garlic is not cooked or mellowed — its full intensity is preserved. Eaten with everything: rice, roti, khatte aloo, kalari, and any dal. The everyday chutney of Dogra households, especially in the rural and hillside areas where garlic grows prolifically.

Ingredients
| 10 cloves | garlic |
| 2 tablespoons | mustard oil |
| 2 teaspoons | red chili powder |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | coriander seeds |
| 1 teaspoon | salt |
| 1 tablespoon | lemon juice |
Instructions
- 1 Peel the garlic cloves and crush them using a mortar and pestle.
- 2 Heat mustard oil in a pan until it starts to smoke, then let it cool slightly.
- 3 Add cumin seeds and coriander seeds to the oil and let them splutter.
- 4 Add the crushed garlic to the pan and sauté until golden brown.
- 5 Remove the pan from heat and add red chili powder and salt. Mix well.
- 6 Allow the mixture to cool, then add lemon juice and mix thoroughly.
- 7 Transfer the chutney to a serving bowl.
Tips
Adjust the amount of red chili powder according to your spice preference.
