1 tablespoon | Mustard oil |

1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 teaspoon | Black pepper powder |
|
2 tablespoons | Ginger-garlic paste |

2 cups | Water |

1 teaspoon | Salt |
|
2 | Bay Leaf |
|
4 | Green Chili , slit |
|
1 | Onion , finely chopped |
|
1 bunch | Cilantro , chopped |
Instructions
- 1 Cut the pork into bite-sized pieces, keeping the skin intact.
- 2 In a large bowl, marinate the pork with turmeric powder, red chili powder, black pepper powder, ginger-garlic paste, and salt. Let it sit for 20 minutes.
- 3 Heat mustard oil in a deep pan and add bay leaves.
- 4 Add the chopped onion and sauté until golden brown.
- 5 Add the marinated pork and cook on high heat until the meat is browned on all sides.
- 6 Add water and bring it to a boil. Reduce the heat to low, cover, and let it simmer for 30-40 minutes or until the pork is tender.
- 7 Add the slit green chilies and cook for another 5 minutes.
- 8 Garnish with chopped coriander leaves before serving.
Tips
For a smokier flavor, you can grill the pork pieces before adding them to the pan.
