Ingredients

500 grams pork with skin
1 tablespoon mustard oil
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon black pepper powder
2 tablespoons ginger-garlic paste
2 cups water
1 teaspoon salt
2 bay leaves
4 green chilies, slit
1 onion, finely chopped
1 bunch fresh coriander leaves, chopped

Instructions

  1. 1 Cut the pork into bite-sized pieces, keeping the skin intact.
  2. 2 In a large bowl, marinate the pork with turmeric powder, red chili powder, black pepper powder, ginger-garlic paste, and salt. Let it sit for 20 minutes.
  3. 3 Heat mustard oil in a deep pan and add bay leaves.
  4. 4 Add the chopped onion and sauté until golden brown.
  5. 5 Add the marinated pork and cook on high heat until the meat is browned on all sides.

  7. 7 Add the slit green chilies and cook for another 5 minutes.
  8. 8 Garnish with chopped coriander leaves before serving.

Tips

For a smokier flavor, you can grill the pork pieces before adding them to the pan.
