Ingredients
| 500 grams | pork belly |
| 1 tablespoon | mustard oil |
| 1 | onion, finely chopped |
| 1 teaspoon | turmeric powder |
| 2 cloves | garlic, minced |
| 1 inch | ginger, minced |
| 2 | green chilies, slit |
| 2 cups | water |
| — | salt to taste |
| 1 | bay leaf |
| 1 | cinnamon stick |
| 2 | cardamom pods |
| 1 | star anise |
Instructions
- 1 Cut the pork belly into bite-sized pieces.
- 2 Heat mustard oil in a pot over medium heat.
- 3 Add the bay leaf, cinnamon stick, cardamom pods, and star anise; sauté until fragrant.
- 4 Add the chopped onion and sauté until translucent.
- 5 Stir in the garlic, ginger, and green chilies; cook for another minute.
- 6 Add the pork pieces and turmeric powder; stir well to coat the pork with spices.
- 7 Pour in the water and add salt to taste.
- 8 Bring to a boil, then reduce the heat to low and cover the pot.
- 9 Simmer for 30-40 minutes until the pork is tender and the flavors are well combined.
- 10 Adjust seasoning if necessary and serve hot.
Tips
For a more authentic flavor, use smoked pork if available.
