1 teaspoon | Turmeric powder |

1 teaspoon | Red chili powder |

Instructions
- 1 Heat mustard oil in a pan until it starts to smoke slightly.
- 2 Add the sliced onions and sauté until golden brown.
- 3 Add the ginger-garlic paste and sauté for another minute.
- 4 Add the turmeric powder, red chili powder, and bay leaves, and stir well.
- 5 Add the pork belly pieces and cook until they are browned on all sides.
- 6 Add the slit green chilies and salt, and mix well.
- 7 Pour in the water and bring it to a boil.
- 8 Reduce the heat, cover, and simmer for about 30 minutes or until the pork is tender.
- 9 Adjust seasoning if necessary and serve hot.

For a smokier flavor, you can grill the pork before adding it to the pan.
