Ingredients

500 grams pork belly
1 tablespoon mustard oil
1 large onion, sliced
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon ginger-garlic paste
2 bay leaves
2 green chilies, slit
1 cup water
salt to taste

Instructions

  1. 1 Heat mustard oil in a pan until it starts to smoke slightly.
  2. 2 Add the sliced onions and sauté until golden brown.
  3. 3 Add the ginger-garlic paste and sauté for another minute.
  4. 4 Add the turmeric powder, red chili powder, and bay leaves, and stir well.
  5. 5 Add the pork belly pieces and cook until they are browned on all sides.
  6. 6 Add the slit green chilies and salt, and mix well.
  7. 7 Pour in the water and bring it to a boil.
  8. 8 Reduce the heat, cover, and simmer for about 30 minutes or until the pork is tender.
  9. 9 Adjust seasoning if necessary and serve hot.

For a smokier flavor, you can grill the pork before adding it to the pan.
