Ingredients

300 grams pork belly
1 medium onion, finely chopped
1 inch ginger, finely chopped
2 cloves garlic, finely chopped
2 tablespoons black sesame seeds
1 teaspoon turmeric powder
1 bay leaf
1 green chili, slit
1 cup water
salt to taste

Instructions

  1. 1 Wash the pork belly thoroughly and cut it into small cubes.
  2. 2 In a pan, dry roast the black sesame seeds on low heat until they are fragrant. Allow them to cool, then grind them into a fine powder.
  3. 3 Heat a pot over medium heat and add the pork cubes, chopped onions, ginger, garlic, bay leaf, and slit green chili.
  4. 4 Stir the ingredients for a few minutes until the onions become translucent.
  5. 5 Add the turmeric powder and salt to the pot, stirring well to coat the pork pieces.
  6. 6 Pour in the water and bring the mixture to a boil.
  7. 7 Reduce the heat to a simmer, cover the pot, and let it cook for about 30 minutes or until the pork is tender.
  8. 8 Once the pork is cooked, add the ground black sesame seeds to the pot and stir well to combine.
  9. 9 Simmer for another 5 minutes, allowing the flavors to meld together.
  10. 10 Remove from heat and serve hot with steamed rice.

Tips

For a richer flavor, you can add a few drops of mustard oil at the end of cooking.
