Ingredients
| 300 grams | pork belly |
| 1 medium | onion, finely chopped |
| 1 inch | ginger, finely chopped |
| 2 cloves | garlic, finely chopped |
| 2 tablespoons | black sesame seeds |
| 1 teaspoon | turmeric powder |
| 1 | bay leaf |
| 1 | green chili, slit |
| 1 cup | water |
| — | salt to taste |
Instructions
- 1 Wash the pork belly thoroughly and cut it into small cubes.
- 2 In a pan, dry roast the black sesame seeds on low heat until they are fragrant. Allow them to cool, then grind them into a fine powder.
- 3 Heat a pot over medium heat and add the pork cubes, chopped onions, ginger, garlic, bay leaf, and slit green chili.
- 4 Stir the ingredients for a few minutes until the onions become translucent.
- 5 Add the turmeric powder and salt to the pot, stirring well to coat the pork pieces.
- 6 Pour in the water and bring the mixture to a boil.
- 7 Reduce the heat to a simmer, cover the pot, and let it cook for about 30 minutes or until the pork is tender.
- 8 Once the pork is cooked, add the ground black sesame seeds to the pot and stir well to combine.
- 9 Simmer for another 5 minutes, allowing the flavors to meld together.
- 10 Remove from heat and serve hot with steamed rice.
Tips
For a richer flavor, you can add a few drops of mustard oil at the end of cooking.
