1 tablespoon | Mustard oil |

1 | Onion , finely chopped |

1 | Bay Leaf |

2 cloves | Garlic , minced |

1 inch | Ginger , minced |
|
1 teaspoon | Turmeric powder |
|
1 teaspoon | Red chili powder |
|
1 cup | Water |

Instructions
- 1 Dry roast the black sesame seeds in a pan until they start to crackle, then grind them into a fine powder and set aside.
- 2 Heat mustard oil in a pan over medium heat.
- 3 Add the bay leaf and sauté for a few seconds.
- 4 Add the chopped onions and sauté until they turn golden brown.
- 5 Add the minced garlic and ginger, and sauté for another minute.
- 6 Add the turmeric powder and red chili powder, and stir well.
- 7 Add the pork cubes to the pan and cook until they are browned on all sides.
- 8 Add the ground sesame seeds and mix well to coat the pork.
- 9 Pour in the water and add salt to taste. Stir well.
- 10 Cover the pan and let it simmer on low heat for about 30 minutes or until the pork is tender.
- 11 Garnish with fresh coriander leaves before serving.
Tips
For a richer flavor, marinate the pork with a little salt and turmeric powder for 30 minutes before cooking.
