Ingredients

500 grams pork, cut into cubes
2 tablespoons black sesame seeds
1 tablespoon mustard oil
1 onion, finely chopped
1 bay leaf
2 cloves garlic, minced
1 inch ginger, minced
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 cup water
salt to taste
fresh coriander leaves for garnish

Instructions

  1. 1 Dry roast the black sesame seeds in a pan until they start to crackle, then grind them into a fine powder and set aside.
  2. 2 Heat mustard oil in a pan over medium heat.
  3. 3 Add the bay leaf and sauté for a few seconds.
  4. 4 Add the chopped onions and sauté until they turn golden brown.
  5. 5 Add the minced garlic and ginger, and sauté for another minute.
  6. 6 Add the turmeric powder and red chili powder, and stir well.
  7. 7 Add the pork cubes to the pan and cook until they are browned on all sides.
  8. 8 Add the ground sesame seeds and mix well to coat the pork.
  9. 9 Pour in the water and add salt to taste. Stir well.
  10. 10 Cover the pan and let it simmer on low heat for about 30 minutes or until the pork is tender.
  11. 11 Garnish with fresh coriander leaves before serving.

Tips

For a richer flavor, marinate the pork with a little salt and turmeric powder for 30 minutes before cooking.
