Ingredients

1 cup rice flour
1 cup water
1 cup coconut milk
1/2 cup jaggery
1/4 teaspoon cardamom powder
1 pinch salt
2 tablespoons grated coconut
2 tablespoons ghee
2 pieces banana leaves

Instructions

  1. 1 In a saucepan, combine water and jaggery. Heat until the jaggery dissolves completely.
  2. 2 Add coconut milk to the jaggery syrup and bring it to a gentle boil.
  3. 3 Slowly add rice flour to the boiling mixture, stirring continuously to avoid lumps.
  4. 4 Cook the mixture on low heat until it thickens and leaves the sides of the pan.
  5. 5 Stir in cardamom powder, salt, and grated coconut. Mix well.
  6. 6 Remove the mixture from heat and let it cool slightly.
  7. 7 Cut banana leaves into squares and lightly wilt them over an open flame to make them pliable.
  8. 8 Grease the banana leaves with ghee.
  9. 9 Place a portion of the rice mixture onto each banana leaf square and fold the leaf to enclose the filling.
  10. 10 Steam the wrapped parcels for about 15-20 minutes.
  11. 11 Serve warm.

Tips

Ensure the banana leaves are properly wilted to prevent tearing while folding.
