Ingredients
| 1 cup | rice flour |
| 1 cup | water |
| 1 cup | coconut milk |
| 1/2 cup | jaggery |
| 1/4 teaspoon | cardamom powder |
| 1 pinch | salt |
| 2 tablespoons | grated coconut |
| 2 tablespoons | ghee |
| 2 pieces | banana leaves |
Instructions
- 1 In a saucepan, combine water and jaggery. Heat until the jaggery dissolves completely.
- 2 Add coconut milk to the jaggery syrup and bring it to a gentle boil.
- 3 Slowly add rice flour to the boiling mixture, stirring continuously to avoid lumps.
- 4 Cook the mixture on low heat until it thickens and leaves the sides of the pan.
- 5 Stir in cardamom powder, salt, and grated coconut. Mix well.
- 6 Remove the mixture from heat and let it cool slightly.
- 7 Cut banana leaves into squares and lightly wilt them over an open flame to make them pliable.
- 8 Grease the banana leaves with ghee.
- 9 Place a portion of the rice mixture onto each banana leaf square and fold the leaf to enclose the filling.
- 10 Steam the wrapped parcels for about 15-20 minutes.
- 11 Serve warm.
Tips
Ensure the banana leaves are properly wilted to prevent tearing while folding.
