Ingredients

Bottle Gourd 1 medium Bottle Gourd , medium-sized, peeled and cubed
Milk 1 cup Milk , full-fat
sugar 1/2 cup Sugar
ghee 2 tablespoons Ghee
cardamom 1/4 teaspoon Cardamom , powder
Cashew 10-12 Cashew , nuts
Almond 10-12 Almond , chopped
Raisin 10-12 Raisin
Saffron 1 pinch Saffron , strands

Instructions

  1. 1 Peel and grate the duddhi (bottle gourd).
  2. 2 Heat 1 tablespoon of ghee in a pan and roast the cashew nuts and almonds until golden brown. Set aside.
  3. 3 In the same pan, add the grated duddhi and sauté for 5-7 minutes until the raw smell disappears.
  4. 4 Add the milk to the pan and cook on a low flame until the milk is absorbed and the duddhi is cooked.
  5. 5 Stir in the sugar and continue to cook until the mixture thickens.
  6. 6 Add the remaining ghee, cardamom powder, and saffron strands. Mix well.
  7. 7 Garnish with roasted cashew nuts, almonds, and raisins before serving.

Tips

For a richer taste, you can add a little khoya (mawa) along with the milk.
