| 1 cup | grated dudhi (bottle gourd) |
| 1 cup | whole wheat flour |
| 1/2 cup | gram flour (besan) |
| 2 tablespoons | semolina (rava) |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | sugar |
| 1 teaspoon | lemon juice |
| 1/4 teaspoon | baking soda |
| — | salt to taste |
| 2 tablespoons | oil |
| 2 tablespoons | chopped coriander leaves |
| 2 tablespoons | grated ginger |
| 2 tablespoons | sesame seeds |
| 2 tablespoons | water |
Instructions
- 1 In a mixing bowl, combine grated dudhi, whole wheat flour, gram flour, semolina, turmeric powder, red chili powder, coriander powder, sugar, lemon juice, baking soda, and salt.
- 2 Mix well and add water gradually to form a soft dough.
- 3 Divide the dough into equal portions and shape each portion into cylindrical rolls.
- 4 Heat water in a steamer and place the rolls on a greased tray.
- 5 Steam the rolls for about 20 minutes or until cooked through.
- 6 Allow the rolls to cool slightly, then cut them into slices.
- 7 Heat oil in a pan, add mustard seeds and cumin seeds, and let them splutter.
- 8 Add sesame seeds and chopped ginger, sauté for a few seconds.
- 9 Add the sliced muthiya and sauté until they are golden brown and crispy.
- 10 Garnish with chopped coriander leaves and serve hot.
Tips
Ensure the dough is not too sticky; adjust with flour if necessary. Serve with green chutney for added flavor.
