Ingredients

1 cup grated dudhi (bottle gourd)
1 cup whole wheat flour
1/2 cup gram flour (besan)
2 tablespoons semolina (rava)
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon sugar
1 teaspoon lemon juice
1/4 teaspoon baking soda
salt to taste
2 tablespoons oil
2 tablespoons chopped coriander leaves
2 tablespoons grated ginger
2 tablespoons sesame seeds
2 tablespoons water

Instructions

  1. 1 In a mixing bowl, combine grated dudhi, whole wheat flour, gram flour, semolina, turmeric powder, red chili powder, coriander powder, sugar, lemon juice, baking soda, and salt.
  2. 2 Mix well and add water gradually to form a soft dough.
  3. 3 Divide the dough into equal portions and shape each portion into cylindrical rolls.
  4. 4 Heat water in a steamer and place the rolls on a greased tray.
  5. 5 Steam the rolls for about 20 minutes or until cooked through.
  6. 6 Allow the rolls to cool slightly, then cut them into slices.
  7. 7 Heat oil in a pan, add mustard seeds and cumin seeds, and let them splutter.
  8. 8 Add sesame seeds and chopped ginger, sauté for a few seconds.
  9. 9 Add the sliced muthiya and sauté until they are golden brown and crispy.
  10. 10 Garnish with chopped coriander leaves and serve hot.

Tips

Ensure the dough is not too sticky; adjust with flour if necessary. Serve with green chutney for added flavor.
