Ingredients
| 1 cup | grated dudhi (bottle gourd) |
| 1 cup | whole wheat flour |
| 1/2 cup | gram flour (besan) |
| 1/4 cup | semolina (rava) |
| 1 tablespoon | ginger-green chili paste |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | sugar |
| 1 teaspoon | cumin seeds |
| 1 teaspoon | mustard seeds |
| 1 tablespoon | oil |
| 1 tablespoon | lemon juice |
| 1/4 teaspoon | baking soda |
| — | salt to taste |
| — | fresh coriander leaves, chopped for garnish |
Instructions
- 1 In a large mixing bowl, combine grated dudhi, whole wheat flour, gram flour, semolina, ginger-green chili paste, turmeric powder, red chili powder, sugar, lemon juice, baking soda, and salt.
- 2 Mix the ingredients well to form a soft dough. Add water if necessary.
- 3 Divide the dough into small portions and shape each into cylindrical rolls.
- 4 In a steamer, arrange the rolls and steam them for about 20 minutes until cooked through.
- 5 Allow the steamed rolls to cool slightly, then cut them into slices.
- 6 Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
- 7 Add the sliced muthiya pieces to the pan and sauté until they are golden brown and slightly crispy.
- 8 Garnish with chopped coriander leaves before serving.
Tips
Serve with green chutney or yogurt for added flavor.
