Ingredients

1 cup grated dudhi (bottle gourd)
1 cup whole wheat flour
1/2 cup gram flour (besan)
1/4 cup semolina (rava)
1 tablespoon ginger-green chili paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon sugar
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 tablespoon oil
1 tablespoon lemon juice
1/4 teaspoon baking soda
salt to taste
fresh coriander leaves, chopped for garnish

Instructions

  1. 1 In a large mixing bowl, combine grated dudhi, whole wheat flour, gram flour, semolina, ginger-green chili paste, turmeric powder, red chili powder, sugar, lemon juice, baking soda, and salt.
  2. 2 Mix the ingredients well to form a soft dough. Add water if necessary.
  3. 3 Divide the dough into small portions and shape each into cylindrical rolls.
  4. 4 In a steamer, arrange the rolls and steam them for about 20 minutes until cooked through.
  5. 5 Allow the steamed rolls to cool slightly, then cut them into slices.
  6. 6 Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
  7. 7 Add the sliced muthiya pieces to the pan and sauté until they are golden brown and slightly crispy.
  8. 8 Garnish with chopped coriander leaves before serving.

Tips

Serve with green chutney or yogurt for added flavor.
