Ingredients
| 1 medium | dudhi (bottle gourd) |
| 2 tablespoons | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | coriander powder |
| 1 teaspoon | cumin powder |
| — | salt to taste |
| 1 tablespoon | jaggery |
| 2 tablespoons | fresh coriander leaves, chopped |
| 1 cup | water |
Instructions
- 1 Peel and dice the dudhi into small cubes.
- 2 Heat oil in a pan over medium heat.
- 3 Add mustard seeds and let them splutter.
- 4 Add cumin seeds and asafoetida, and sauté for a few seconds.
- 5 Add the diced dudhi to the pan and stir well.
- 6 Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt.
- 7 Mix everything well and add water to the pan.
- 8 Cover the pan and let it cook on low heat for about 15-20 minutes, or until the dudhi is tender.
- 9 Add jaggery and mix well, allowing it to melt and blend with the shaak.
- 10 Garnish with chopped coriander leaves before serving.
Tips
For a richer flavor, you can add a teaspoon of ghee at the end of cooking.
