Ingredients

1 medium dudhi (bottle gourd)
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon cumin powder
salt to taste
1 tablespoon jaggery
2 tablespoons fresh coriander leaves, chopped
1 cup water

Instructions

  1. 1 Peel and dice the dudhi into small cubes.
  2. 2 Heat oil in a pan over medium heat.
  3. 3 Add mustard seeds and let them splutter.
  4. 4 Add cumin seeds and asafoetida, and sauté for a few seconds.
  5. 5 Add the diced dudhi to the pan and stir well.
  6. 6 Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt.
  7. 7 Mix everything well and add water to the pan.
  8. 8 Cover the pan and let it cook on low heat for about 15-20 minutes, or until the dudhi is tender.
  9. 9 Add jaggery and mix well, allowing it to melt and blend with the shaak.
  10. 10 Garnish with chopped coriander leaves before serving.

Tips

For a richer flavor, you can add a teaspoon of ghee at the end of cooking.
