Ingredients
|
100 grams | Rice flour |
|
50 grams | Mung bean flour |
|
600 ml | Water |
|
1 teaspoon | Pandan paste |
|
200 grams | Palm sugar |
Instructions
- 1 In a bowl, mix rice flour, mung bean flour, and 600 ml of water until smooth.
- 2 Add pandan paste to the mixture and stir well.
- 3 Pour the mixture into a saucepan and cook over medium heat, stirring continuously until it thickens and turns translucent.
- 4 Prepare a bowl of ice water.
- 5 Using a cendol mold or a colander with large holes, press the cooked mixture into the ice water to form cendol strands.
- 6 In another saucepan, combine palm sugar, 100 ml of water, and a pinch of salt. Cook over low heat until the sugar dissolves and forms a syrup.
- 7 In a separate saucepan, heat coconut milk with vanilla extract until warm. Do not boil.
- 8 To serve, place cendol strands in a glass, add palm sugar syrup, and top with warm coconut milk.
- 9 Add ice cubes to the glass before serving.
Tips
For a more authentic flavor, use fresh pandan leaves instead of pandan paste if available.
