Ingredients
| 1 cup | broken wheat (daliya) |
| 2 tablespoons | ghee |
| 3/4 cup | jaggery |
| 2 cups | water |
| 1/4 teaspoon | cardamom powder |
| 2 tablespoons | chopped almonds |
| 2 tablespoons | raisins |
| — | saffron strands (optional) |
| — | pinch of salt |
Instructions
- 1 Heat ghee in a pan on medium heat.
- 2 Add broken wheat and roast it in ghee until it turns golden brown and releases a nutty aroma.
- 3 In a separate pot, bring water to a boil and dissolve the jaggery in it. Strain to remove impurities if necessary.
- 4 Add the jaggery water to the roasted broken wheat, stirring continuously to avoid lumps.
- 5 Add a pinch of salt and cardamom powder, then cover and cook on low heat until the wheat absorbs the liquid and becomes soft.
- 6 Once cooked, add chopped almonds, raisins, and saffron strands if using. Mix well.
- 7 Serve warm, garnished with additional nuts if desired.
Tips
For a richer flavor, use more ghee and roast the wheat slowly over low heat.
