Ingredients

1 cup gram flour (besan)
1 cup buttermilk
1 tablespoon ginger-green chili paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon sugar
1 teaspoon salt
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida
1 tablespoon sesame seeds
1 tablespoon fresh coriander leaves, chopped
1 tablespoon grated coconut

Instructions

  1. 1 In a mixing bowl, combine gram flour, buttermilk, ginger-green chili paste, turmeric powder, red chili powder, sugar, and salt. Mix well to form a smooth batter.
  2. 2 Grease a flat plate or thali with a little oil and set aside.
  3. 3 In a pan, heat 1 tablespoon of oil and add mustard seeds, cumin seeds, and asafoetida. Allow the seeds to splutter.
  4. 4 Pour the batter into the pan and cook on low heat, stirring continuously until the mixture thickens and leaves the sides of the pan.
  5. 5 Quickly spread the thickened batter onto the greased plate, spreading it evenly with a spatula.
  6. 6 Sprinkle sesame seeds, chopped coriander leaves, and grated coconut over the spread batter.
  7. 7 Allow it to cool slightly, then cut into desired shapes and serve.

Tips

For a more authentic taste, use fresh homemade buttermilk.
