| 1 cup | gram flour (besan) |
| 1 cup | buttermilk |
| 1 tablespoon | ginger-green chili paste |
| 1 teaspoon | turmeric powder |
| 1 teaspoon | red chili powder |
| 1 teaspoon | sugar |
| 1 teaspoon | salt |
| 1 tablespoon | oil |
| 1 teaspoon | mustard seeds |
| 1 teaspoon | cumin seeds |
| 1 pinch | asafoetida |
| 1 tablespoon | sesame seeds |
| 1 tablespoon | fresh coriander leaves, chopped |
| 1 tablespoon | grated coconut |
Instructions
- 1 In a mixing bowl, combine gram flour, buttermilk, ginger-green chili paste, turmeric powder, red chili powder, sugar, and salt. Mix well to form a smooth batter.
- 2 Grease a flat plate or thali with a little oil and set aside.
- 3 In a pan, heat 1 tablespoon of oil and add mustard seeds, cumin seeds, and asafoetida. Allow the seeds to splutter.
- 4 Pour the batter into the pan and cook on low heat, stirring continuously until the mixture thickens and leaves the sides of the pan.
- 5 Quickly spread the thickened batter onto the greased plate, spreading it evenly with a spatula.
- 6 Sprinkle sesame seeds, chopped coriander leaves, and grated coconut over the spread batter.
- 7 Allow it to cool slightly, then cut into desired shapes and serve.
Tips
For a more authentic taste, use fresh homemade buttermilk.
