South Indian filter coffee — dark-roasted Arabica or Robusta coffee (often from Coorgi or Chikmagalur estates) brewed through a two-part metal filter that drips concentrated decoction, combined with hot frothy milk and sugar to a precise ratio. The coffee is aerated by pouring between a steel tumbler and davara (wide saucer) to create a creamy froth. Served in a steel tumbler-davara set. Coorgi Arabica — grown in the shade of silver oak and jungle trees at high altitude — is among the finest single-origin coffees in India.

Ingredients
| 3 tablespoons | filter coffee powder |
| 1.5 cups | water |
| 1 cup | whole milk |
| — | sugar to taste |
Instructions
- 1 Boil 1.5 cups of water in a saucepan.
- 2 Place the upper compartment of the coffee filter over the lower compartment.
- 3 Add 3 tablespoons of filter coffee powder into the upper compartment.
- 4 Pour the boiling water over the coffee powder in the filter.
- 5 Cover the filter and allow the coffee to drip into the lower compartment for about 10-15 minutes.
- 6 In a separate saucepan, bring 1 cup of milk to a boil.
- 7 Once the coffee has dripped, pour the decoction into a cup.
- 8 Add boiled milk to the coffee decoction according to your preference.
- 9 Add sugar to taste and stir well.
- 10 Serve the filter coffee hot in traditional steel tumblers.
Tips
For a stronger flavor, increase the amount of coffee powder or reduce the milk.
