Ingredients
| 3 large | russet potatoes |
| 1 quart | vegetable oil |
| — | salt to taste |
Instructions
- 1 Peel the potatoes and cut them into sticks about 1/4 inch thick.
- 2 Place the potato sticks in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
- 3 Drain the potatoes and pat them dry with a clean kitchen towel or paper towels.
- 4 Heat the vegetable oil in a deep fryer or large heavy-bottomed pot to 325°F (165°C).
- 5 Fry the potatoes in batches for about 3-4 minutes until they are soft but not browned. Remove them with a slotted spoon and let them drain on paper towels.
- 6 Increase the oil temperature to 375°F (190°C).
- 7 Fry the potatoes again in batches for another 2-3 minutes until they are golden brown and crispy.
- 8 Remove the fries with a slotted spoon and drain them on fresh paper towels.
- 9 Season the fries with salt to taste while they are still hot.
Tips
For extra crispiness, double fry the potatoes as described in the recipe. Make sure the oil is hot enough before frying.
